Gluten free Banana Muffin

Ingredients to make Gluten free Banana Muffin

  • Coconut flour – 1/2 cup
  • Salt - 1/4 tsp
  • Baking Soda - 1/2 tsp
  • Eggs -4
  • Coconut oil - 1/4c
  • Honey - 1/4c
  • Medium size Banana - 2
  • Vanilla extract- 1 tsp
  • Walnut - 1/4 c and more for topping

How to make Gluten free Banana Muffin

  1. Preheat oven to 180 for 10 min and line the liners in muffin pan.
  2. Combine coconut flour, salt and baking soda.
  3. Using a whisk, mix eggs, coconut oil, vanilla and honey.
  4. Add mashed bananas and mix until combined.
  5. Add wet to dry ingredients and whisk until well combined. 
  6. Stir in 1/4 cup walnuts and pour in muffin liners and top it with walnuts.
  7. Bake until toothpick inserted comes clean for about 15 min. 
My Tip: Dry the residue in shadow after extracting Coconut milk for a day After its well dried grind it for fine coconut flour.
