ABOUT Honey puffs (Greek loukoumades) with a lime - honey syrup RECIPE

Loukoumades or honey puffs are light and airy Greek style doughnuts. The batter is a super simple yeast one flavoured with honey, and then deep fried. They are traditionally served drizzled with honey or icing sugar. The lime honey syrup is a wee bit of extra work but goes really well with the puffs as the lime contrasts the sweetness of all that honey perfectly. You can choose to douse them in the syrup or just pour the syrup on top. A sprinkling of cinnamon and some chopped nuts on top and you have an absolutely delicious dessert , or teatime snack !

Ingredients Serving: 5

  1. 160 grams or 1 1/4 cups all purpose flour
  2. 10 grams or 1 tablespoon corn flour
  3. 1/4 teaspoon salt
  4. 2 tablespoons honey
  5. 180 ml or 3/4 cup water
  6. 1/4 teaspoon sugar
  7. 5 grams or 1 teaspoon instant or active dried yeast
  8. For the lime and honey syrup:
  9. 120 ml or 1/2 cup water
  10. 120 ml or 1/2 cup honey
  11. 1 tablespoon sugar
  12. 1-2 tablespoon lime juice ( from half a lime)
  13. For frying : oil
  14. For serving (optional):
  15. 1 teaspoon powdered cinnamon
  16. 1 tablespoon finely chopped almonds

Instructions

  1. To bloom your yeast , heat the water to lukewarm ( if you dip your finger in, you should be able to keep it in more 4-5 minutes and no longer). Add the sugar and yeast. Let rest for 5-15 minutes until frothy.
  2. In a bowl, stir together the flour ,corn flour and salt.
  3. Add the honey and yeast mixture. Mix until smooth.
  4. Cover and rest in a warm place for 30 minutes until the batter rises and you can see bubbles on top.
  5. As the batter rests ( proves) , you can prepare your lime and honey syrup.
  6. In a small saucepan , bring to a boil the honey, water , sugar and lime juice.
  7. Simmer for few minutes until thick. Take off heat and let cool.
  8. Heat about three inches oil in a pan or wok to medium heat.
  9. Once the oil is hot ,drop teaspoon fuls of batter into it . You can use another teaspoon to push the batter from the spoon.
  10. In batches, fry until golden brown on one side, flip and fry until golden brown on the other side.
  11. Remove from oil and drain on a kitchen towel.
  12. While still warm , dip in the syrup and place on serving plate. You can also place the puffs on serving plate and pour the syrup on top
  13. Dust with a little bit of cinnamon and chopped almonds . Serve warm !
