Ingredients Serving: 4

  1. Pavakkai (Bitter gourd) – 2 nos
  2. Corn flour – 1tbsp
  3. Rice flour – 1 tbsp
  4. Besan flour – 2 tbsp
  5. Red chili powder – ½ tbsp
  6. Coriander powder – 1 tsp
  7. Fennel powder – ½ tsp
  8. Cumin powder – ¼ tsp
  9. Salt – as needed
  10. Oil – to deep fry

Instructions

  1. Wash bitter gourd, trim the ends, de-seed and chop as thin equal sized slices.
  2. Wash bitter gourd, trim the ends, de-seed and chop as thin equal sized slices.
  3. Sprinkle a tbsp. of water and blend well.
  4. Let it sit for 10 mins
  5. Heat oil in a kadai, once heated, keep the flame medium and start frying pavakkai as small batches.
  6. Fry both sides equally to a golden brown, drain excess oil and place on a kitchen towel. Serve hot with coffee or chai
