ABOUT Tofu in Yellow Pumpkin Gravy (A Vegan recipe) RECIPE

Instead of Onions, I use grated Pumpkin as the base for making this healthy gravy. Since pumpkin is very rich in anti oxidants and vitamins I try to use it in my cooking as much as possible. Once you taste this gravy , i bet you will also start using pumpkins as the base for gravies instead of Onions..

Ingredients Serving: 5

  1. Tofu / Soya Paneer cubes 250 gms
  2. Grated Yellow Pumpkin 2 cups
  3. Chopped Tomatoes from 2 tomatoes
  4. green chillies 3
  5. Garlic pods 8
  6. Ginger an inch
  7. Kashmiri chilli powder 2tea spoons
  8. Coriander seed powder 2 tea spoons
  9. Cumin seed Powder 1/2 tea spoon
  10. Salt to taste
  11. Oil 4 tb spoons
  12. Almonds soaked in warm water and peeled 10
  13. Cloves and Cinnamon sticks crushed 1/2 tea spoon
  14. Kasuri methi leaves 2 tea spoon
  15. Thick Coconut Milk 1 Cup

Instructions

  1. Heat 2 tb spoons of oil in a pan and fry garlic, ginger,tomatoes, grated pumpkin and green chillies till the tomatoes become mushy.
  2. Add the almonds to the roasted stuff and grind to smooth paste and keep aside.
  3. Now heat the pan with rest of the oil and crackle the clove, cinnamon and the cumin seeds.
  4. Transfer the ground paste in to it and stir well.
  5. Add the coriander powder, cumin powder, salt, red chilli powder and keep stirring till the oil separates.
  6. Add the Tofu cubes, mix and add a cup of water.Keep the flame low and close the pan with a lid.
  7. After 5 minutes add the coconut milk, kasuri methi leaves and switch off.
  8. Garnish with coriander leaves and serve hot with boiled rice or rotis.
