ABOUT Mushroom egg paratha RECIPE

Egg paratha is very famous street food in India specialy in Delhi & punjab. One of the wonderful & easy receipe for breakfast, that is protein rich, healthy and tasty . I make this very frequently n I am a very big fan of this egg paratha because this brings my old college days memories alive. During late night in Delhi, you can find these paratha stalls on many places. It is loved by all at our home.

Ingredients Serving: 2

  1. Eggs 4
  2. Wheat flour 1 cup
  3. Salt to taste
  4. Chopped mushroom 1 cup
  5. chopped tomatoes 2
  6. Chopped green chillies
  7. Chopped onions 1
  8. Grated ginger 1 tsp
  9. Chopped coriander leaves
  10. black pepper powder 1 tsp
  11. Grated cheese 1/2 cup
  12. Grated Paneer 1/4 cup
  13. Red chilli flakes 1 tsp
  14. Italian seasoning 1 tsp (optional)
  15. oil

Instructions

  1. In a mixing bowl add flour, salt and oil & knead the mixture in a smooth dough using some water.
  2. Divide the dough into 2 or 4 balls.
  3. Roll out the dough ball eventually using a rolling pin, then fold it twice to form a triangle. Roll it out again to make a triangle sheet.
  4. Repeat the process with the same dough.
  5. Chopped all the veggies like this.
  6. In another bowl whisk the eggs along with chopped onions, green chillies, tomatoes, mushrooms, grated ginger, cheese, paneer, salt, black pepper powder, red chilli flakes, Italian seasoning and Coriander leaves and set aside.
  7. Place the rolled dough on the hot tawa, let it cook for 1-2 mins on both sides. Add a little oil on the surface and let it cook for one more minute.
  8. At the edges starts to crisp, quickly make a slit using a sharp knife along the folds and pour in half the quantity of eggs.
  9. Tilt the paratha a little so that the eggs mix sides in. Then flip it over and repeat the process on the other side.
  10. Drizzle some more oil on the paratha and press the surface gently using the back of the spoon.
  11. Turn up the heat and & continue cooking the paratha until it fluffs up and crisp brown.
  12. Serve hot with the butter on top.
