ABOUT Cauliflower kheer / Gobhi ki Kheer RECIPE

In India we usually use cauliflower in making sabji, especially mix veg, pav bhaji, pulao, stuff parantha, pakoras, etc. But I decided to make a dessert out of it. Cauliflower kheer is made by sauteeing cauliflower to remove its typical odour and then cooked in milk.

Ingredients Serving: 8

  1. 1 litre full cream milk
  2. 1 cup grated cauliflower
  3. 1 tablespoon desi ghee
  4. 1/2 cup sugar (adjust as per taste)
  5. 1/4 teaspoon nutmeg powder
  6. 2-3 green cardamom pods
  7. 1 tablespoon cornflour
  8. 12-15 pistachios soaked & chopped

Instructions

  1. Heat the milk and bring it to a boil. Lower the flame & let it simmer.
  2. In a small bowl take 4 tbsp of the boiled milk and add corn flour to it. Mix & keep aside.
  3. In a broad pan, add desi ghee. Add cardamom pods & saute for 30 seconds.
  4. Next add the grated cauliflower and saute on high flame for 3 minutes, stirring continuously.
  5. Now add the milk and let it cook on a medium flame until the cauliflower is soft & mushy.
  6. Now add the sugar and boil the kheer until the sugar dissolves.
  7. Add the nutmeg powder & corn flour mix with milk. Stir continuously so as no lumps remain
  8. Let it cool completely. Garnish with chopped pistachios & Serve
