ABOUT Japanese Aubergine (Brinjal) Salad! RECIPE

This insanely aromatic and lip-smacking recipe was taught to me by my very good friend who herself is a food-blogger like me. When I first heard the term 'Brinjal SALAD', I was beyond apprehensive...but that first taste and we were absolutely sold. This is an incredible recipe and certainly a keeper!

Ingredients Serving: 2

  1. 1 large brinjal, cut into half-moon shaped slices
  2. 2 Tablespoons Soy Sauce
  3. 1 tablespoon sesame oil
  4. 2 cloves Garlic, grated
  5. 3 tablespoons honey
  6. 1 tablespoon grated ginger
  7. 1 teaspoon sugar
  8. 1 tablespoon Mirin
  9. Some Olive oil to brush the brinjal slices
  10. 1 tablespoon fresh lemon juice

Instructions

  1. Start by making the dressing for your salad. In a bowl, combine the Soy sauce, Mirin, Sesame oil, grated Garlic, grated Ginger, lemon juice, Honey and Sugar. Cover and refrigerate for at least 20 minutes.
  2. Meanwhile, brush the brinjal slices with a little olive oil and grill them on the stove-top. You can also grill them in an oven. Place on a papar-towel to soak the excess oil!
  3. Arrange your grilled brinjal slices in an attractive pattern in a broad bowl.
  4. Finally, pour your beautiful dressing over the slices. DO NOT MIX! The stunning Japanese Aubergine Salad is ready to serve!
