This insanely aromatic and lip-smacking recipe was taught to me by my very good friend who herself is a food-blogger like me. When I first heard the term 'Brinjal SALAD', I was beyond apprehensive...but that first taste and we were absolutely sold. This is an incredible recipe and certainly a keeper!
Woww...Yummyy...
Start by making the dressing for your salad. In a bowl, combine the Soy sauce, Mirin, Sesame oil, grated Garlic, grated Ginger, lemon juice, Honey and Sugar. Cover and refrigerate for at least 20 minutes.
Meanwhile, brush the brinjal slices with a little olive oil and grill them on the stove-top. You can also grill them in an oven. Place on a papar-towel to soak the excess oil!
Arrange your grilled brinjal slices in an attractive pattern in a broad bowl.
Finally, pour your beautiful dressing over the slices. DO NOT MIX! The stunning Japanese Aubergine Salad is ready to serve!
