Ingredients Serving: 4

  1. Basmati rice - 500 gms
  2. Sliced onion - 1 big size
  3. Ginger garlic paste - 1 tbsp
  4. Rec chilly powder - 1/2 tsp
  5. Turmeric powder - 1/2 tsp
  6. Garam masala powder - 1/2 tsp
  7. Curd - 1/2 cup
  8. Carrot - 2
  9. Green peas - 1 cup
  10. Cauliflower florets - 1/2 cup
  11. Potato - 1/2 cup
  12. Salt - to taste
  13. Cashew nuts - 1 tbsp
  14. Almonds - 1 tbsp
  15. Raisins - 1 tbsp
  16. Crushed mint leaves - 1 tsp
  17. Black pepper - 3 - 4
  18. Cumin seeds - 1/4 tsp
  19. Green cardamom - 2 - 3
  20. Black cardamom - 1
  21. Mace/javitri - 1 piece
  22. Cloves - 2 - 3
  23. Cinnamon - 1 inch stick
  24. Grated nutmeg/jaifal - 1/4 tsp
  25. Saffron - few strands
  26. Clarified butter - 2 tbsp
  27. Oil - 4 tbsp

Instructions

  1. Heat oil in a pan.
  2. Add cashew nuts,almonds and raisins fry and strain it.
  3. Add sliced onion deep fry it and strain half onions for garnish and keep the other half in the pan itself.
  4. Add cumin seeds,black pepper,cloves,mace,green and black cardamom,cinnamon to crackle and keep it aside.
  5. Now add ginger garlic paste,turmeric powder,red chilly powder,garam masala powder,nutmeg powder and also 2 tbsp water and saute it.
  6. Cut all this veggies in equal size and add these in the pan and mix well. Add one cup of water and salt as required and cover it.
  7. Cook it for five mins.
  8. Soak basmati rice for half an hour.
  9. After the rice being soaked cook half done rice and turn off the flame.
  10. Add clarified butter in a pan.
  11. Now add half done rice and saffron in the first layer.
  12. In the second layer add veggies of thick gravy and also add crushed mint leaves into it.
  13. Now repeat the first and second layer again.
  14. Lastly ,add fried cashew nuts,almonds and raisins and fried onions.
  15. Cover it and now switch on the flame.
  16. Cook for 2 - 3 mins in high flame..
  17. Keep the pan on the tawa and cook for 10 - 12 mins in low flame.
  18. Veg biryani is ready to eat
  19. Serve hot.
