Karela as a vegetable has many health benifits. None of us like bitter vegetables and looks for tasty vegetables. I have tried a unique way to make this bitter vegetable sweet, palatable and tangy & tasty recipe which will rwduce toxicity of body. Worth experimenting!

Ingredients Serving: 4

  1. Bitter gourd 4 numbers
  2. Salt to taste
  3. sugar 1 tablespoon
  4. Jaggery 2 tablespoons
  5. Curry leaves 15 numbers
  6. Oil 3 tablespoons
  7. Turmeric powder 1/2 teaspoon
  8. For tempering jeera 1/4 teaspoon
  9. Caraway seeds 1/4 teaspoon
  10. Fennugreek seeds 1/4 teaspoon
  11. Green chilli 2 numbers cut chopped
  12. Mustard seeds 1/2 teaspoon
  13. Mustard paste 1 teaspoon
  14. Tamarind pulp 2 tablespoons
  15. For stuffing. boiled potato 2 numbers
  16. Cottage cheese / Paneer 3 tablespoons
  17. Onion 1 piece cut it chopped
  18. Salt to taste
  19. chaat masala 1 teaspoon

Instructions

  1. Make a slit in the center of the bitter gourd .
  2. Boil the bitter gourd with 1 cup of water and little salt .
  3. Than remove all seeds .
  4. Heat a kadai with 2 tablespoons oil and add chopped onion , chopped chilli, fry one minute , then add mashed potato , mashed Paneer salt to taste chat masala , cook for two minutes , than keep aside.
  5. Now fill this stuffing into the bitter gourd with the help of a spoon.
  6. Fill all the bitter gourd same way.
  7. Again heat a kadai with 1 tablespoon oil to fry all stuffed bitter gourd , fry both side .
  8. While the bitter gourd are being fried then add one by one spices for the tempering .
  9. Then add tamarind pulp , jaggery , sugar cook for 3 minutes and mix it properly .
  10. Then add mustard paste mix it further , then serve bitter gourd sweet and sour ( tok Misti ) !
