ABOUT Stuffed Monkey Pudding RECIPE

This is a recipe that my daughter in law showed me on social media and helped me to prepare as well. A wonderful dessert that is worth all the effort.

Ingredients Serving: 6

  1. For the Pudding:
  2. Cream Cheese - 1 pack (200 gms)
  3. Chocolate Chips - 1 packet
  4. 1 cup - White Sugar
  5. 2 tsp - Cinnamon
  6. 1/2 cup - Butter
  7. 1 cup Brown Sugar
  8. 1/2 cup Walnuts
  9. 1/4 cup raisins
  10. For the Cookie dough:
  11. 200 gms butter
  12. 100 gms sugar
  13. 250 gms flour
  14. 1 egg yolk
  15. A pinch of salt
  16. 2 tsp vanilla extract

Instructions

  1. Preheat the oven to 175 degree celsius.
  2. Cream together the butter and sugar until it islight and fluffy. Add the egg yolk and mix well. Then add flour, salt and vanilla extract. Mix till it comes together to form a sticky cookie dough. Keep it in the freezer for at least 1 hour.
  3. Pinch out some dough and place 1/2 tsp cream cheese with a few chocolate chips in the center. Fold over and repeat this process for the rest of the dough.
  4. In a plastic bag, combine white sugar and cinnamon. Add in the balls and shake until they are well coated. Repeat this process for the remainder of the stuffed dough balls.
  5. Microwave the brown sugar and butter in a bowl, stir in between till it reaches a caramel consistency. Keep it aside.
  6. Grease a bundt pan sprinkle half of the walnut and rasins, half of the stuffed dough pieces, drizzle half the caramel glaze. Repeat with remaining walnuts, rasins, dough balls and glaze.
  7. Bake in a preheated oven for 30-35 minutes. Once cooked, remove it from the oven and turn it upside down onto a plate, allow to cool for 10 minutes before lifting off the pan.
  8. Lift off the bundt pan and enjoy!
