Ingredients to make Fresh fruit pancakes

  • 1 cup All purpose flour
  • 1/3 cup sugar
  • 1 cup milk
  • 4 tbsp butter + some more
  • A pinch of salt
  • 4 - 5 strawberries chopped finely
  • 8 - 10 black grapes chopped
  • 2 tsp honey
  • 1 tsp vanilla essence
  • 1 tsp baking powder

How to make Fresh fruit pancakes

  1. Cream together butter and sugar till light and frothy using an electric mixer. Add in the egg.
  2. Sift together flour, baking powder and salt. Alternating with milk add this in the egg-butter-sugar batter using a spatula.
  3. Next add in the vanilla essence followed by honey. Lastly add in the chopped fruits.
  4. Heat a flat frying pan. Add some butter and add a ladle full of the batter. Cover with a dome lid for 1 minute, remove and flip the pancake.
  5. The pancake should brown nicely on both sides. Serve with maple syrup.
My Tip: Adding honey or even brown sugar changes the flavour. You can replace the fruits with endless options.
