Egg Basket

Ingredients to make Egg Basket

  • 5 boiled eggs
  • 1 tsp freshly ground Pepper
  • 20 gms salted butter
  • 7-8 sprigs of coriander leaves
  • 2 cheese slices
  • Salt to taste
  • 2-3 Cabbage or Lettuce leaves to garnish/serve

How to make Egg Basket

  1. Cut the eggs length wise so you get 10 portions from the 5 eggs.
  2. Remove the yolk from all the eggs and reserve the white portion/baskets for later
  3. Now add the butter, pepper and finely cut sprigs of coriander leaves to the yolks and mash well to form a smooth buttery soft paste. Add salt as desired.
  4. Take a spoon full of the yolk mix and fill the egg white baskets up one by one.
  5. Cut the cheese slices into 4 squares and place one square each on top of the yolk mix.
  6. Preheat your oven for 5 minutes at 180°C, reduce the oven temperature to 150°C.
  7. Place all the eggs in the oven and let it bake for 5 minutes or until the cheese on top has melted.
  8. Serve with love on a bed of lettuce or cabbage leaves.
My Tip: I cut boiled eggs with a piece of string to get a smooth cut rather than using the knife.
