Ingredients to make Vegetable Soup with black eyed beans and penne pasta - Zero Oil Soup

  • Black Eyed Beans - 1/2 Cup boiled
  • Whole grain penne pasta -1/2 cup
  • Mashed Potato - 1 medium
  • Water - 3 cups
  • Tomatoes - 2 (chopped)
  • Onions - 1/2 Cup
  • Pizza Sauce - 4 tbsp
  • Garlic Cloves - 4 (Crushed)
  • Red chili Powder - 1/2 tbsp
  • Coriander - 1/2 tbsp
  • Cumin powder - 1/2 tbsp
  • Salt as per taste
  • Italian seasoning - 1 tbsp
  • Freshly grounded black pepper.

How to make Vegetable Soup with black eyed beans and penne pasta - Zero Oil Soup

  1. Soak blackeyed beans or Canned Beans and pressure cook with 1/2 cup of water, salt and potato.
  2. When the pressure comes down, add blackeyed beans with water to the sauce pan. Add boiled potato, chopped onions, crushed garlic, tomatoes, pizza sauce, salt, red chilli powder, cumin and coriander powder. Add 2 more cups of water.
  3. Bring it to a boil. This takes around 7 to 10 minutes.
  4. Check for seasoning and garnish with finely chopped coriander leaves and freshly grounded black pepper and 1 tbsp Italian seasoning.
