Vegetable oats upma | Fibre rich breakfast
- Oats – 1.5 cup/ 250 gms
- Chopped vegetables (Beans Carrots Beet root Onion) – 1 cup
- Chopped Tomatoes – 2 medium size
- Curry leaves – a few
- Mustard seeds – ½ tsp
- Cumin seeds – 1 tsp
- Salt – 1 tsp
- Lemon juice – 1 tsp
- Heat 1 tsp oil in a kadai, splutter cumin seeds, curry leaves. Sauté vegetables and tomatoes.
- Add oats and mix well. Add 3 cups or double the quantity of water. Cook for 10 minutes till the water evaporates.
- Once ready, add lemon juice and serve hot for breakfast.
