ABOUT Aloo Gobhi (Potato and Cauliflower Vegetable) RECIPE

Potatoes and cauliflower covered with a tangy thick masala of onions and tomatoes, this dish is a perfect accompaniment for hot rotis, phulkas or chapaties.

Ingredients Serving: 4

  1. 2 large potatoes (peeled and cut into cubes)
  2. 2 cups cauliflower (cut into medium florets)
  3. 2 green chillies (finely chopped)
  4. 2 medium tomatoes (finely chopped)
  5. 2 large onions (finely chopped)
  6. 1 teaspoon cumin seeds
  7. 1/2 teaspoon turmeric powder
  8. 1 tablespoon coriander powder
  9. 1 teaspoon garam masala powder
  10. 1/4 teaspoon red chillie powder
  11. 1 tablespoon ginger garlic paste
  12. salt to taste
  13. 2 tablespoon oil

Instructions

  1. Heat oil and add cumin seeds. When they splutter, add green chillies and saute for a minute.
  2. Add onions and salt and fry till onions turn pink.
  3. Add tomatoes and saute till soft
  4. Add the turmeric, garam masala, red chillii and coriander powder. Saute for a few minutes.
  5. Add ginger garlic paste and saute till raw smell of ginger garlic goes away.
  6. Add cauliflower, potatoes and about 2 cups of water. Cover and cook till both cauliflower and potatoes get cooked.
  7. Serve hot with phulkas or chapaties.
