Ingredients Serving: 2

  1. Brinjals 2
  2. Onions 2
  3. tomatoes 2
  4. Salt 1 tbsp
  5. Cheese 1 tbsp
  6. Oil 1 cup
  7. For Pesto
  8. Coriander leaves finely chopped 1 cup
  9. basil leaves 1/4 cup
  10. Cashews 1/4 Cup
  11. Olive oil 2 tbsp
  12. Cheese grated 1/4 Cup
  13. Salt 1/4 tsp ( adjust according to taste)
  14. Cheese 1 tbsp ( to be spread while baking)

Instructions

  1. Wash and Chop Brinjals in rounds.
  2. Apply salt neede and keep aside for 5 minutes.
  3. Till that we will make Pesto.
  4. Blend all ingredients mentioned for Pesto except Cheese .
  5. Take out in a bowl, add finely grated cheese and mix well. Keep aside.
  6. Chop Onions and tomatoes fine. Add Salt and pepper to it.
  7. Add 1 tbsp grated Cheese and mix thoroughly.
  8. Now heat oil in a pan and deep fry Brinjals.
  9. Remove on absorbant paper.
  10. Spread the Brinjals on a parchment paper in a greased baking tray.
  11. Apply a layer of prepared Pesto over it.
  12. Now spread Onion Tomato Cheese mixture over it.
  13. Spread grated Cheese evenly on top.
  14. Bake in a Preheated oven for 10 minutes at 230 C.
  15. Your delicious Brinjal Bruchetta is ready to serve.
