Ingredients to make Pita pockets

  • To make Pita pockets:
  • 2 cups whole wheat flour
  • 2 tsp dry active yeast
  • 1 tsp salt
  • 1 tsp sugar
  • 2 tsp olive oil or refined oil
  • Warm water to knead the dough
  • To make Falafel:
  • 2 cups of chickpeas soaked overnight and ground
  • 2 small onions finely chopped
  • 1 small bunch Coriander leaves finely chopped
  • 1 tsp ginger garlic paste
  • 1 tsp chilli powder
  • 2-3 tbsp bread crumbs
  • Salt to taste
  • Oil to deep fry
  • A few tbsp Hummus

How to make Pita pockets

  1. For Pita Pockets:
  2. Mix everything and knead together to form a soft dough.
  3. Grease a container and put the dough in it, put it in a warm place to let it rise.
  4. It takes about an hour or two to rise. In the meantime, we start with the falafel.
  5. For the Falafel - Mix all ingredients together except the oil, adjust the salt and chilli powder according to your taste.
  6. Make small patties.
  7. Heat the oil in a wok, deep fry the patties on medium high heat till golden brown.
  8. Remove with a slotted spoon on absorbent paper.
  9. Once the dough doubles, punch it once or twice, then roll it into ovals and roast/toast it (as you do a roti) on medium low heat till the pita puffs up.
  10. Remove from heat and keep it covered till needed
  11. Assemble the pockets:
  12. Cut Pita bread into half to make pockets. Chop some capsicum, tomatoes, lettuce and cucumber to make a salad. Take a half of the pita bread, open it.
  13. Spread the inside with the hummus followed by some salad and falafel into the pocket.
  14. Top with some more hummus. Repeat the same for the remaining pockets. Microwave for a minute. Serve hot.
