My Dad loves this form as for his moms special dish I love it too,and enjoy doing though nof so often now but sure a rage with north indians.Baigan/brinjal khachri a very quick deliciius semu fried Baigan in the most aromatic spices is awesome with dal an roti and or rice.

Ingredients Serving: 2

  1. 1 brinjal
  2. 1/2 tspn Cummin powder
  3. 1/2 tspn corriander powder
  4. 1/4tspn ginger powder
  5. 1/4 tspn pepper powder
  6. 1/2 tspn red chilli flakes
  7. 1tblspn mustard. Oil
  8. 1tspn Canola oil
  9. 1-2 pieces lemon

Instructions

  1. Cut the brinjal into roundels 1 to 1/2 inch thick
  2. Make X cut on all brinjal slices
  3. Apply some salt and keep 10 minutes
  4. Take all the dry spices mentioned and
  5. Mix these keeping chilli flakez aside
  6. Heat a pan add mustard oil heat to smoke and cool
  7. Now place on the oil the salted brinjal roundelsin a pan on stove
  8. Roast one side in the oil, turn sides
  9. Now add masala on to each brinjal
  10. With a spoon add oil from sides and roast masala side well turning each slice,add chilli flakes now
  11. Roast chilli flakes side well too now
  12. Removed on foil carefully ready to serve
  13. Serve with dal rice and roti
