ABOUT Baigan Bharta (boiled method) RECIPE

This baigan bhartha is a different recipe which I learnt from my respected mother in law to avoid insects that can be present inside the brinjal. These insects can be avoided in this method of making bhartha by boiling and not compromising with the taste. This recipe is super easy as well as quick. Check out the full recipe as to how to do it

Ingredients Serving: 6

  1. Brinjals 3 no. plump
  2. Onions 2 no.
  3. Tomatoes 3 no.
  4. green chillies 2 no.
  5. 2 inch garlic and few cloves of garlic
  6. Amchur powder 1/2 tsp
  7. Salt, turmeric powder, red chilli powder and garam masala according to taste

Instructions

  1. Take 3 plump brinjal. Remove the crown and peel them.
  2. Like this....
  3. Cut these brinjal while checking for spoils and insects and discard that part by cutting like I did.
  4. Now put these brinjals into a pressure cooker with 2 cups of water.
  5. Meanwhile chop 2 big onions, 3 tomatoes, 2 inch of ginger, green chillies and few cloves of garlic.
  6. In a kadhai heat 3 tbsp of oil and spatter some cumin seeds.
  7. Add chopped onions and saute till brown.
  8. After 4 whistles take out boiled brinjals in a sieve to dicard extra water.
  9. After onions add chopped tomatoes and green chillies.
  10. Add turmeric podwer, salt, red chilli powder and garam masala. Saute till oil separates.
  11. After the masala is ready add boiled brinjals.
  12. Cover and cook for 15 to 20 minutes.
  13. Add half teaspoon of amchur powder (optional).
  14. Garnish with chopped coriander(optional). Serve hot with roti or parantha to relish this yummy baigan bhartha.
