ABOUT Plum cake RECIPE

adapted from AP Mohan's Rich plum cake..it turned out to be a very delicious, fruity true blue plum cake with subtle undertones of cinnamon, orange and lemon.

Ingredients Serving: 6

  1. Unsalted Butter- 100gms(softened)
  2. Brown sugar- 100gms
  3. Plain flour- 100gms
  4. Soaked fruits and nuts- 2-3 cups(see tip)
  5. Cocoa powder- 2 tbsp(I used Hersheys)
  6. Jam- 1 tbsp
  7. Eggs- 2 (at room temp.)
  8. Condensed milk- 2 tbsp
  9. Cinnamon powder- 1 tsp
  10. Zest of 1/2 an orange
  11. Zest of 1/2 a lemon
  12. Vanilla essence- 1 tsp
  13. Baking powder- 1 tsp
  14. Salt- 1/4 tsp
  15. Almonds/cashews for placing on top
  16. For the caramel-
  17. Sugar-2 heaped tbsp
  18. Water- 2-3 tbsp

Instructions

  1. Prepare the caramel first- In a small bowl combine the sugar and water and boil rapidly while stirring constantly till its a deep golden colour, take care not to burn it. Let cool a bit and add another tbsp of water.Let cool.
  2. Preheat the oven at 180 deg C. Grease and line a round tin.Combine the sugar and softened butter in a large bowl and cream till light and fluffy add the eggs and condensed milk.Whisk to combine.
  3. Sieve flour, baking powder, cocoa and salt together and keep aside.
  4. Add the jam, caramel, zest, vanilla and fruit to the egg-butter mixture and mix well.
  5. Lastly fold in the flour with a light hand.The batter will be light brown but will darken on baking.
  6. Transfer to a pan, top with almonds/cashews.Bake for 40-50 minutes or till a toothpick inserted in the middle comes out clean.
