Ingredients to make Plum cake

  • Unsalted Butter- 100gms(softened)
  • Brown sugar- 100gms
  • Plain flour- 100gms
  • Soaked fruits and nuts- 2-3 cups(see tip)
  • Cocoa powder- 2 tbsp(I used Hersheys)
  • Jam- 1 tbsp
  • Eggs- 2 (at room temp.)
  • Condensed milk- 2 tbsp
  • Cinnamon powder- 1 tsp
  • Zest of 1/2 an orange
  • Zest of 1/2 a lemon
  • Vanilla essence- 1 tsp
  • Baking powder- 1 tsp
  • Salt- 1/4 tsp
  • Almonds/cashews for placing on top
  • For the caramel-
  • Sugar-2 heaped tbsp
  • Water- 2-3 tbsp

How to make Plum cake

  1. Prepare the caramel first- In a small bowl combine the sugar and water and boil rapidly while stirring constantly till its a deep golden colour, take care not to burn it. Let cool a bit and add another tbsp of water.Let cool.
  2. Preheat the oven at 180 deg C. Grease and line a round tin.Combine the sugar and softened butter in a large bowl and cream till light and fluffy add the eggs and condensed milk.Whisk to combine.
  3. Sieve flour, baking powder, cocoa and salt together and keep aside.
  4. Add the jam, caramel, zest, vanilla and fruit to the egg-butter mixture and mix well.
  5. Lastly fold in the flour with a light hand.The batter will be light brown but will darken on baking.
  6. Transfer to a pan, top with almonds/cashews.Bake for 40-50 minutes or till a toothpick inserted in the middle comes out clean.
My Tip: Soaked fruits and nuts- I used raisins, walnuts, cashews, almonds, dried figs along with tutti fruity and soaked it in Minute maid pulpy orange for 3 days(or upto a month).You can use rum/grape juice/orange juice.
