ABOUT Kakarakaya Podi / Bitter Gourd Powder RECIPE

This dish is one of recipes of my mother, a perfect side dish to be served with some dal rice.

Ingredients Serving: 5

  1. 6 Kakarakaya / Karela / Bitter Gourd
  2. 2 Garlic whole
  3. 2 Tbsp whole Red chilli powder
  4. ½ cup Dessicated coconut powder
  5. Curry leaves (According to your taste)
  6. To taste Salt
  7. To fry Oil

Instructions

  1. Cut the Karela into round shape. In a bowl add karela pieces, salt, turmeric powder and mix well. Leave it for 1 hour. Squeeze the excess water.
  2. Heat oil in a pan, deep fry the karela pieces until it turns crispy on a low flame. Strain the pieces.
  3. Fry the curry leaves in oil.
  4. In a mixi jar add garlic, chilli powder, curry leaves, salt and make slight coarse powder. Now mix the coconut powder with ground coarse powder.
  5. Heat 3 tsp oil in the pan, add ground mixture to it. Keep stirring on low flame for 5 mins. Add fried karela pieces and mix well. Remove from flame and cool it completely.
  6. Store it in an air tight container. Serve with rice.
