ABOUT Cream Cheese Bread Pudding RECIPE

The great British chefs call this 'Cinnamon French Toast' and 'Cream Cheese Bake', but for me it is a simple Cream Cheese Bread Pudding. Have it hot for breakfast to get your day going in the most wonderful way.

Ingredients Serving: 4

  1. 10 cups (1 large loaf) day-old Brioche cut into cubes
  2. 8 eggs lightly beaten
  3. 1 and 1/4 cup milk
  4. 3/4 cup heavy cream
  5. 1/2 cup maple syrup
  6. 1/2 cup (1 stick) unsalted butter melted
  7. 1/4 cup brown sugar
  8. 1 (8 oz.) package cream cheese room temp cut into cubes
  9. 1 tablespoon cinnamon
  10. 1 teaspoon pure vanilla extract
  11. Maple syrup to garnish
  12. 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 176 degrees celsius and lightly grease a 9x13-inch baking dish.
  2. In a large bowl, whisk together the eggs, milk, cream, maple syrup, dark sugar, cinnamon, vanilla extract and salt.
  3. Beat in melted butter and whisk for another 2 minutes.
  4. Drop the bread cubes into the egg mixture, press them down so they're completely coated and absorb all the liquid.
  5. Spread 1/2 bread chunks in an even layer across the baking dish and sprinkle cubed cream cheese evenly across the bread.
  6. Top with remaining bread and cubed cream cheese.
  7. Cover with aluminum foil and transfer baking dish to the oven. Bake for 35-45 minutes, or until it is cooked through and golden in colour.
  8. Remove from the oven and garnish with more maple syrup and serve immediately.
