Monster Muffin

Ingredients to make Monster Muffin

  • spinach – 1 bunch (sufficient to make ½ cup puree)
  • bananas – 2 (1/2 cup mashed)
  • olive oil – ĵ cup (extra virgin)
  • lemon juice – 2 tsp
  • Eggs – 2 (optional as we are using banana as well)
  • Palm sugar – ĵ cup
  • Baking powder – 1 tsp
  • cinnamon powder – 1 tsp
  • salt – ĵ tsp
  • Whole wheat flour – 1 cup
  • avocado – 1
  • Beet root – 1
  • Palm sugar – 1 tsp

How to make Monster Muffin

  1. Wash and chop spinach. Take out any long/thick stem. Basically make sure to use only nice leaves. Put it in blender; add lemon juice and olive oil. Make a smooth shiny puree.
  2. Beat eggs and sugar together till nice and fluffy.Add mashed banana and cinnamon powder.
  3. In a separate bowl mix flour, baking powder and salt. Sieve them 2-3 times.
  4. Add spinach puree to dry ingredients.
  5. Fold dry ingredients in to egg mixture, gently. Mix them nicely and lightly till the time no lumps remain.
  6. Preheat oven to 180 for 10 minutes and line your muffin tray.
  7. Fill muffin tray till half and bake it on 180 for approx 20 minutes or till toothpick comes out clean.
  8. Frosting method:
  9. Peel and chop beetroot. Cook it in minimum water for 15 minutes. Separate the water.
  10. Mash one avocado nicely and add beetroot water and palm sugar. Mix them nicely and your frosting is ready.

My Tip:

Use fresh shiny spinach which can make nice green puree.
