Strawberry and Lemon Loaf Cakes

Ingredients to make Strawberry and Lemon Loaf Cakes

  • 2 cups flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp baking soda
  • 1 cup sugar
  • Zest and juice of one lemon
  • 1/2 cup oil
  • 1/2 cup sour cream
  • 2 eggs
  • 1/2 tsp lemon extract
  • 2 drops yellow food colouring
  • 1 cup + 4 strawberries sliced
  • For the glaze 1/2 cup icing sugar
  • 2 tsps lemon juice

How to make Strawberry and Lemon Loaf Cakes

  1. 1. In a bowl, measure out the sugar and add the lemon zest. Rub them together until the oils from the zest are released.
  2. 2. In a separate bowl measure out the dry ingredients - flour, baking powder, baking soda and salt. Keep aside
  3. 3. In a third bowl break the eggs and whisk to break them down. Add the rice bran oil, sour cream lemon juice, lemon extract and food colouring. Whisk into the sugar mix.
  4. 4. Add the dry ingredients in one go and stir until mixed. Fold in 1 cup strawberries
  5. 5. Pour into the prepared tin and dot with sliced strawberries.
  6. 6. Bake for 50 minutes at 180 degree centigrade. Remove and cool.
  7. 7. Meanwhile mix the icing sugar and lemon juice together and drizzle the glaze over it.

My Tip:

Throw in some strawberry jam into the batter for an extra strawberry flavour
