Ingredients to make Spinach rice with kadhai matar mushroom

  • For spinach rice: 1cup boiled brown rice
  • Spinach - 1 bunch
  • 1 green chili
  • Salt
  • Khada masalas sabut (long elaichi dalchinni)
  • Chopped onions-2
  • 2 tomatoes
  • One tbsp of olive oil
  • For kadhai matar mushroom
  • Matar- 1 cup
  • Mushroom-1 cup
  • Salt
  • Khada masalas (as used earlier)
  • 2 tomatoes roughly chopped
  • 2 onions roughly chopped
  • green chillies 2
  • Low fat milk1 cup
  • 1 walnut

How to make Spinach rice with kadhai matar mushroom

  1. For Spinach rice-
  2. Par boil spinach.
  3. Purée it with tomatoes ,chilli, garlic, khada masalas.
  4. Now put oil in a pan, add onions and sauté on low flame.
  5. Put purée of spinach and let it reduce.
  6. Once it is reduced put salt and sauté for another minute.
  7. Add rice and stir nicely.
  8. Remember while boiling rice don't over do it, it should be exactly like biryani rice.
  9. Your spinach rice is ready.
  10. For the Kadhai matar mushroom-
  11. Boil matar and mushrooms.
  12. Heat pan add onion, tomatoes, khada masalas, ginger- garlic, salt ,chili and two spoon of water cover it and let it cook on slow flame.
  13. Once its cooked, let cool.
  14. Now add walnut to this masala and purée it nicely.
  15. Take pan add one tbsp olive oil.
  16. Add masala to oil and sauté you can add haldi at this stage if you want all depends what color you want.
  17. Once it is done add matar mushroom and sauté for minute.
  18. Now add low fat milk and continue stirring.
  19. After two minutes of cooking you will get wonderful gravy.
  20. Enjoy without guilt.
