ABOUT AKHROT KE KABAB / WALNUT CUTLETS RECIPE

This is one of the tastiest and rich snack of the Mughlai Cuisine made with walnuts, cashew nuts, almonds, khoya and paneer. I have used a spoonful of " Tangier Spice Mix " which has added to the flavours.

Ingredients Serving: 4

  1. Walnuts - 1/2 cup ( boiled and chopped)
  2. Almonds - 2 tbsps (powdered)
  3. Cashew nuts - 2 tbsps (powdered)
  4. Walnuts - 2 tbsps (powdered)
  5. Potato - 1 (boiled and grated)
  6. Green peas - 1/4 cup ( boiled and crushed lightly)
  7. Paneer - 1/4 cup (grated)
  8. Khoya - 3 tbsps
  9. Green chillies - 1 tsp ( finely chopped)
  10. Ginger paste - 1 tsp
  11. Garlic paste - 2 tsps
  12. Tangier Spice Mix - 1 tsp
  13. Turmeric powder - 1/4 tsp
  14. Cumin powder - 1 tsp
  15. Red chilli powder - 1/2 tsp
  16. Salt - to taste
  17. Olive oil or Desi ghee - 3 - 4 tbsps

Instructions

  1. Soak the walnuts for few hours and boil them .
  2. In a plate set aside khoya, boiled and chopped walnuts., boiled and crushed green peas, chopped green chillies, and the spice powders.
  3. In a second plate set aside grated paneer, mashed and grated potato and the powdered dry fruits.
  4. Take a pan and heat one tbsp of oil. Saute the ginger garlic paste.
  5. Tip in the green chillies , Tangier Spice Mix, cumin powder, turmeric powder and red chilli powder.
  6. Stir to mix them.
  7. Now add the boiled walnuts, green peas, khoya and salt.
  8. Sauté until well blended. Remove the mixture in a large plate or bowl.
  9. Add the grated paneer, potato and powdered dry fruits.
  10. Mix everything well. Make Kababs of any shape and size you prefer.
  11. Heat oil in a pan and shallow fry the kababs until done.
