ABOUT Pumpkin Puri RECIPE

Mild sweet delicious Puri made from Red Pumpkin.

Ingredients Serving: 4

  1. Red Pumpkin Peeled and Grated 1 cup
  2. Wheat Flour 1.5 cup (approx)
  3. Crushed Jaggery 1/2 cup
  4. Cardamom Powder 1/4 teaspoon
  5. Salt 1/4 teaspoon
  6. Oil 1 teaspoon
  7. Oil for Frying Puri

Instructions

  1. 1. Wash, Peel and Grate Pumpkin
  2. 2. In a pan, add 1 teaspoon of oil and grated red pumpkin, sauté on low flame for a minute and cook covered on low flame for 2 minutes
  3. 3. Add Crushed Jaggery, salt, mix and cook till Jaggery melts. Keep stirring all the time. If you cook longer then Puris will be hard.
  4. 4. Transfer the mixture to a plate in which you will mix flour and bind the dough
  5. 5. When the mixture is warm, add about a cup of wheat atta each and mix. Add Cardamom powder. Keep adding a spoonful of wheat flour till you bind a medium stiff dough. Do not add water. Leave the dough to rest for 15 minutes.
  6. 6. Roll puris – little thicker than normal puris and deep fry in oil
  7. 7. These puris can be eaten hot or cold. Serve with desi ghee / clarified butter.
