This super tasty pumpkin Rava uthappa is perfect for breakfast.

Ingredients Serving: 6

  1. 1.5 cup fine semolina or suji (Rava)
  2. 1 cup grated pumpkin
  3. 1/2 cup finely chopped onion
  4. 3/4 cup curd
  5. 1/4 cup rice flour
  6. Salt to taste
  7. 2 tsp chopped green chilli
  8. Pinch of baking soda
  9. Oil for frying
  10. Handful chopped fresh coriander leaves

Instructions

  1. Take semolina in mixing bowl add rice flour, curd, salt chilli, coriander leaves, grated pumpkin, onion, mix it with a spoon.
  2. Now add 1/2 cup of water.. Or as required. Batter should not be too thin it should like dosa batter .stir it well.
  3. Mix everything well and keep it aside for 20 minutes.
  4. After 20 minute stir the batter well. Now take a Tava apply some oil pour in the batter to make a small size uthappa.
  5. Sprinkle some grated pumpkin and press it with a spoon.. Keep the flame medium.
  6. After 2-3 minute flip the uthappa and fry well.
  7. Pumpkin semolina uthappa ready to serve.... Serve it with your favorite chutney and enjoy.!
