Ingredients to make Pumpkin soup

  • Red pumpkin- 300 g (with skin)
  • onion- 1 medium
  • bay leaves- 1-2
  • Black pepper corns- 10-12
  • butter- 3 tsp.
  • Salt and pepper to taste
  • water- approx. 1 litre
  • Fresh cream- for garnishing

How to make Pumpkin soup

  1. Roughly dice the red pumpkin after removing the green skin.
  2. Chop the onion into small pieces.
  3. In a pressure cooker, add the butter. Add the pepper corns and bay leaves after it melts. Stir for a minute.
  4. Add the chopped onion and saute till it becomes translucent.
  5. Add the diced pumpkin. Saute till it softens a little.
  6. Add hot water till it covers all the contents in the cooker. Put the lid on and let it give out one whistle. Reduce the flame to low for 2-3 minutes. Turn off the heat.
  7. Remove the pepper corns and bay leaves. Blend the pumpkin mixture, after it cools a bit.
  8. Remove in a vessel, add more water if required, add salt and pepper to taste. Bring it to a boil .
  9. Serve hot with a dash of fresh cream!

My Tip:

Remove the spices before blenderising since they don't form fine particles and may change the mouthfeel.
