ABOUT Polish Potato Pancakes RECIPE

This recipe was taught to me by a wonderful French lady when I was visiting her family in France. It was one of their family favourites.

Ingredients Serving: 2

  1. 500 gms large potatoes
  2. 2 eggs
  3. 2 tbsp plain flour
  4. Salt to season
  5. Butter for pan-frying
  6. Sour cream and Castor sugar for serving
  7. Sambal Oelek - Hot Chilli Paste Recipe:
  8. 1 kg red chillies
  9. 2 tbsp soy sauce
  10. 1/4 cup vinegar
  11. 1/2 tbsp sugar
  12. 2 tbsp oil
  13. Salt to taste
  14. Water as needed

Instructions

  1. Wash and peel the potatoes. Using medium–size holes, grate them into a bowl.
  2. Add in the eggs and flour, season with salt and combine it well.
  3. Heat a little butter in a large frying pan over medium heat.
  4. Once the butter starts bubbling, cook large spoonfuls of the potato mixture for 2–3 minutes on each sides or until it is golden in colour and crisp.
  5. To make the hot chilli paste, put the listed ingredients in a blender and make a coarse paste.
  6. Take a kadai, cook the paste on a high flame for about 7 minutes, while stirring continously. Then cool it and refrigerate in a sterilized glass bottle. (If dried chillies are being used then soak them in hot water for about 15 mins first).
  7. Serve hot with sour cream and castor sugar or Sambal Oelek - Hot Chilli Paste.
