Ingredients Serving: 4

  1. 3 table spoons sesame seeds
  2. 1 cup peanuts
  3. 1 cup coriander seeds
  4. 2 table spoons cumin
  5. Salt to taste
  6. 6-8 dried red chillies
  7. 4-5 table spoons Chana dal
  8. Half pound small brinjals
  9. 1 cup oil

Instructions

  1. Take a pan and dry roast the sesame and peanuts
  2. Add some oil to pan and dry roast Chana dal, dhania, cumin and red chillies
  3. Make a coarse powder and add the salt to the powder
  4. Blend in the powdered peanuts and sesame
  5. Slit the brinjal into 4 making sure the base stem is in tact
  6. Stuff the dry powder
  7. Add oil to pan and add the stiffed brinjals
  8. Cover pan and cook in low flame for 20-25 minutes turning the brinjals slowly without breaking
  9. Yummy Venkaya is ready to be eaten with rice and ghee
