A typical bengali side dish that cook the pumpkin with fried Hilsa fish head.Very minimum spices are used to cook to retain the original taste of pumpin and flavour of Hilsa.Best part of this recipe is very easy to cook

Ingredients Serving: 2

  1. hilsa fish head 1 cut into halves
  2. pumpkin 250 gms cut in cubes
  3. potato 1/2 cut into cubes (optional)
  4. nigella seeds 1 tspn
  5. Bay leaves 2
  6. dried red chilles 2
  7. chopped garlic cloves 5
  8. onions 1 slices
  9. green chillies slited 2
  10. green chilles chopped 2
  11. Turmeric 1/4 tspn
  12. Red chilly powder 1/4 tspn
  13. coriander powder 1/4tspn
  14. cumin powder 1/4 tspn
  15. Salt
  16. sugar
  17. Mustard oil

Instructions

  1. washed,cleaned the fish head properly
  2. add salt & turmeric
  3. heat oil in wok and place the fush heads,fry untill u get dark red color from bith sides,keep aside
  4. u will see oil will come out from the fish,while frying,if the fish will fresh
  5. now in this same oil add dried red chilly,bay leaves,nigella seeds for tempering, allow them to release fragrance
  6. now add chopped garlic fry the
  7. add onions, saunte them few min
  8. add pupmkin pieces into it, add salt,sugar,turmeric,red chilly powder,saute for 2 min
  9. cover with a lid,it will cook with it's own juice
  10. now open lid add the coriander & cumin powder mix,then add the fried fish heads,mix properly
  11. start stirring from bottom to top,keep the flame high,add a splash of water if needed and mix all the ingredients
  12. off the flame add chopped green chilles serve with rice
