Eggless Fruity Muffins

Ingredients to make Eggless Fruity Muffins

  • 1 cup all purpose flour
  • 1/2 cup powdered oats
  • 1/4 cup corn flour
  • 1/4 cup whole wheat flour
  • 1 cup castor sugar
  • 1 medium ripe banana
  • 1 cup Soyabean oil
  • 1 tsp vanilla essence
  • 1 tsp baking soda
  • 1 1/2 tsp baking powder
  • Chocolate chips for garnishing

How to make Eggless Fruity Muffins

  1. Preheat oven at 180 degree centigrade and lightly grease a muffin tray.
  2. In a large mixing bowl, add all the dry ingredients: Flour, oats, baking soda and baking powder. Keep aside.
  3. In another bowl whisk together sugar and oil until light and fluffy.
  4. Add mashed banana and vanilla essence. Gently mix.
  5. Make a well in the middle of the dry ingredients and pour all the wet ingredients. Add 1/2 cup of water and gently stir towards one side only.
  6. Fill the muffin moulds with the help of ice cream scoop.
  7. Top it with chocolate chips and bake for 15 - 20 minutes.
  8. Bake until a toothpick inserted comes out clean.

My Tip:

For any kind of fruity muffins replace water with puree of your choice of fruit. Banana is a key ingredient for spongy baking. It is a great egg replacer.
