ABOUT Dhubakeri ringda RECIPE

Brinjal stuffed with onion paste and other spices, a perfect curry to be served with some roti.

Ingredients Serving: 2

  1. Small brinjals 10 pieces
  2. Onion 1
  3. Ginger & chilly paste - 1 tbsp
  4. Fresh coconut 2 table spoon
  5. Peanuts 2 table spoon
  6. Oats powder 2 table spoons
  7. Roasted sesame seeds 1 table spoon
  8. Haldi [turmeric powder] 1 tea spoon
  9. Red chilly powder 1 table spoon
  10. Garlic 2 to 3 cloves
  11. Imli paste [tamarind paste] 1 table spoon
  12. Salt as per taste
  13. Oil 2 spoons
  14. Rai [mustard seeds] 1 tea spoon
  15. Jeera [cumin seeds] 1 tea spoon
  16. Curry leaves few

Instructions

  1. Wash and slit the brinjals, keep aside.
  2. Now take mixer grinder jar add in fresh coconut, onion,peanuts,sesame seeds, oats,tamarind paste, ginger & chilly paste alomg with the powdered masalas. Grind them into a paste.
  3. Now fill this paste into the brinjals and steam them till they are soft.
  4. heat some oil in a pan and then add mustard seeds , cumin seeds, curry leaves and add in the brinjals. Cook for few mins and garnish with coconut and coriander.
