ABOUT Phulkopir Ghonto with Gobindobhog rice RECIPE

It is a Bengali dish, very similar to famous "Murighonto" which is prepared with fish head and Gobindobhog rice (aromatic rice). This recipe is a vegetarian recipe with cauliflower and Gobindobhog rice. Fried cauliflower, potatoes and aromatic Gobindibhog rice are fried separately then cooked together, flavoured with garam masala and ghee. And finally flour and milk paste gives the dish a creamy taste.

Ingredients Serving: 4

  1. Cauliflower 1 medium sized
  2. Potato 1 large
  3. Gobindibhog / basmati rice 1/4 cup
  4. Green pea 1/4 cup
  5. Whole dry spices :
  6. Cardamom 2
  7. Clove 2
  8. Cinnamon stick 1/2 inch
  9. Bay leaf 1
  10. Whole cumin seeds 1/4 tsp
  11. Powered spices :
  12. Turmeric powder 1/4 tsp
  13. Cumin Powder 1/2 Tsp
  14. Coriander powder 1/2 tsp
  15. chilli powder 1 tsp
  16. Garam masala powder 1/2 tsp
  17. salt as per taste
  18. Oil as required
  19. Ghee 1 tsp
  20. Sugar 1 tsp
  21. To make paste :
  22. 1 tbsp flour
  23. 2 tbsp Milk

Instructions

  1. Wash rice and dry in a colander
  2. Cut potato and cauliflower ,pan fry them one by one separately with a pinch of salt and turmeric powder
  3. Fry potatoes also until light red in the same pan in low heat
  4. Fry rice also for 3-4 minutes , in low heat . Keep aside
  5. In the same pan add oil, when hot enough add whole jeera / paanchphoron and bay leaf
  6. Add crushed ginger and whole garam masala , saute in medium heat for 1-2 minutes
  7. Add all the powdered spices , turmeric powder, cumin powder , coriander powder, chilli powder and salt
  8. Add fried cauliflower florets, potato , fried rice . Mix all of them carefully
  9. Add 1 cup of water and cover with a lid , let the rice cook well for 10 minutes approximately in low heat. If not cooked well add some more water and cook until soft in low heat. Stir carefully, don't break the cauliflower florets.
  10. Add Blanched green peas , cook for 5 more minutes in low heat
  11. Add sugar
  12. Add GARAM masala powder
  13. Add a tsp ghee
  14. Mix together flour and milk, without lumps. Pour this over the Sabzi. Switch off gas
  15. Serve hot with rice
