South Indian Side dish for all Tiffin item, made with loads of vegetables.

Ingredients Serving: 7

  1. Beans - 6
  2. Carrot - 1
  3. Brinjal - 3
  4. Cluster beans - 6
  5. Drumstick - 1
  6. Chayoto – 50 gram
  7. Pumpkin – 50 gram
  8. Tomato – big 1 no
  9. Small Onion – 10 nos
  10. Green chilli – 2 no
  11. Sambar powder – 3 tspn (sakthi or Aachi or Eastern)
  12. Turmeric powder – ¼ tspn
  13. Jaggery - few
  14. Tamarind – small lemon size ball
  15. For dhal : Toor dal – 150 gram
  16. Onion – 1 big or small onion 8 nos
  17. Asofeitida – ¼ tspn
  18. Turmeric powder– ¼ tspn
  19. Methi seeds – ¼ tspn
  20. For tempering : Oil - 3 tspn
  21. ghee - 1 tspn
  22. small onion - 5
  23. crushed garlic - 2 nos
  24. coriander leaves - few
  25. curry leaves - few
  26. for garnishing - coriander leaves few

Instructions

  1. Wash and cook the dhal in a pressure cooker, mash it well and keep it aside. Soak tamarind into hot water and extract the pulp.
  2. Wash and cut all the vegetables desire shape . . In a wide vessel add all the vegetables and add 3 cups
  3. Add tamarind extract stir it well and
  4. Add them all into the cooked and mashed dhal, add jaggery, little curry leaves stir it well and cook over medium heat for 5 to 7 minutes
  5. Heat a vessel. Temper the above said ingredients one by one and add it to sambar and mix well.Transfer the sambhar into a wide bowl and garnish with coriander leaves. Serve hot with idly or dosa
