ABOUT MOUSSAKA RECIPE

a greek or east europe recipe including spiced mince lamb/chicken/veggies which has a base of sliced eggplant/pototao mingling with a bechamel sauce crust over the top

Ingredients Serving: 3

  1. 1 eggplant thinly sliced
  2. For filling -
  3. chicken mince 250
  4. 3 medium sized onion sliced
  5. 6/7 cloves chopped
  6. tomato ketchup 2 tblspn
  7. Pizza sauce 2 tblspn
  8. pepper powder 1 tspn
  9. all spice powder 1 tspn
  10. Red chilly powder 1 tspn
  11. cinnamon powder 1 tspn
  12. oragano 1/2 tspn
  13. Salt
  14. coriander leaves chopped
  15. white oil (preferably olive oil)
  16. Grated cheese
  17. 1 egg white
  18. for bechamel sauce-
  19. 2tblspn all purpose flour
  20. 2 tblspn butter
  21. Salt
  22. nutmeg piwder 1/4 tspn
  23. oragano 1/4 tspn
  24. Pepper powder 1/2 tspn
  25. 100/120 ml milk
  26. For topping -
  27. Chopped Coriander
  28. grated permesan cheese
  29. chilly flakes

Instructions

  1. add salt to the washed eggplant slices and keep in cloth to dry
  2. heat oil in wok add onions
  3. add boiled chicken mince and salt,fry them together
  4. add chopped garlic
  5. add the spices and tomato ketchup and pizza sauce and saute them untill water will absorb
  6. then add grated cheese, mix. switch off the flame
  7. wait few min to cool this slightly then mix the egg white into it. keep aside
  8. shallow fry the eggplant slices
  9. now make the bechamel sauce -
  10. add butter in wok & melt it
  11. add flour into this and mix.
  12. now add cooled milk into it but in batches and mix. untill get a desire consistency
  13. add the saesonings/spices/herbs into the sauce
  14. cool it down slightly & add 1 egg yolk,mix
  15. now grease the baking plate and place the fried eggplants first
  16. now make a layer of mince
  17. spread some grated permesan cheese
  18. the again make the same layers of eggplants & spice-cooked mince
  19. add the sauce over the layers and put chopped coriander, grated cheese and chilly flakes
  20. bake 12 min in 200degree celsius or till the top would get brown
  21. cut into pieces with knife and serve
