Gutti vankaya kura is a popular dish from Andhra cuisine. It is stuffed brinjal curry which goes perfectly with chapati and rice .When i saw the recipe at indian healthy recipes I decided to cook it .and believe me it is so delicious that it vanished in few minutes.

Ingredients Serving: 4

  1. Brinjal -4 small
  2. Olive oil - 4 tablespoons
  3. Salt - to taste
  4. Onions - 3 medium size finely chopped
  5. Tomato - 4 finely chopped
  6. Curry leaves - 1 Spring
  7. Red chilli (degi mirch) -1 teaspoon
  8. Powdered coriander seeds - 3 teaspoons
  9. Powdered fennel seeds - 2 teaspoons
  10. Pav bhaji masala - 1 teaspoon
  11. Garam masala -1/2 teaspoon
  12. mustard seeds - 1/4 teaspoon
  13. Cumin seeds - 1/4 teaspoon
  14. Coriander leaves - handful finely chopped
  15. Turmeric Powder - 1/2 teaspoon
  16. For stuffing
  17. Peanut -4 tablespoons
  18. Coconut-2 tablespoons
  19. Coriander seeds -2 tablespoons
  20. Fennel Seeds - 1 tablespoon
  21. Salt- to taste
  22. Chaat masala - 1/2 teaspoon

Instructions

  1. Roast and powder all the ingredients of stuffing and keep a side
  2. Wash and cut brinjals with one end of the brinjals and the stalk leaving intact
  3. Immersed brinjals in salted water till use
  4. Stuff all the brinjals with stuffing masala
  5. Take a wok and put 1 tablespoon olive oil and roast brinjals for one minutes
  6. Keep roasted brinjals aside
  7. Now in that wok add remaining olive oil and splitter mustard and cumin seed .add curry leaves.
  8. Now add chopped onions and saute till little brown.now add chopped tomatoes and saute for 3-4 minutes .
  9. Add all the spices of curry and saute for one minutes
  10. Add water till your desired consistency of gravy and add stuffed brinjals and cook till tender on low flame
  11. After switch off the flame add coriander leaves
  12. Your gutti vankaya kura is ready
