Ingredients Serving: 6

  1. Lady's finger 1/2 kg
  2. Water 1 1/2 ltr
  3. Tamarind's thick pulp 1/4 cup
  4. Jaggery 1/4 cup
  5. Salt 1 tsp
  6. For masala.. grated coconut 1 cup
  7. Urdu 4 tsp
  8. Daniya 8 tsp
  9. Jeera 1 tsp
  10. Red dry chilly 6
  11. curry leaves 1 string
  12. Hing a pinch
  13. Turmeric powder 1/4 tsp
  14. For temper. ..mustard seeds 1/2 tsp
  15. Red dry chilly 1
  16. Cooking oil 3 tsp

Instructions

  1. Wash cleanly the lady's finger and spread it on cloth to dry.
  2. Now remove the top and bottom of these.
  3. Cut into pieces as shown below in picture.
  4. Take few tamarind and soak in water for minimum 5 minutes. Then squeeze by using our finger. Take out the pulp and it should measure upto 1/2 cup.
  5. Add 1/2 ltr water to it and let it be boil.
  6. Add jaggery to this boiling tamarind water (according to your taste).
  7. Now add salt also.
  8. While it is boiling nicely, add the lady's finger pieces.
  9. Now close the lid and leave it to cook 0=for 5 minutes on a medium flame.
  10. Now we need to make the fried masala. First take red chilly, daniya and urdu. Add 2 tsp of cooking oil and fringe low flame. when it starts smelling, add jeera,hing, turmeric powder and curry leaves 4-5. Mix well for 3-4 seconds and switch of the flame.
  11. Now add grated coconut and grind this in mixi jar, add water and grain little roughly.
  12. Now pour the ground masala to the cooked veggie. Add remaining water.
  13. Stir well and let it be boil well. Now the curry is ready.
  14. Now do tempering of mustard seeds and red dry chilly by adding 1 tsp oil. When the mustard seeds start spluttering add to the final dish and put few curry leaves also . Then mix well.
  15. Serve either in hot or cool along rice or chapathi.
