Ingredients to make Mishti Doi

  • 1 litre full cream milk
  • 2-3 cardamoms
  • 1/3 cup sugar (can add an additional 2 tbsp if you like it sweeter)
  • 2-3 tablespoons yogurt/curd for setting
  • some shelled chopped pistachios for garnishing

How to make Mishti Doi

  1. Heat milk in a heavy utensil on a medium flame.Keep stirring the milk (so that it doesn’t burn at the bottom) until it starts simmering and reduces a bit in quantity.
  2. Turn off the flame and add half amount of sugar into it.
  3. Heat a pan and add rest of the sugar into it to caramelize.Cook the sugar on a medium flame and keep stirring .
  4. When the sugar is caramelized, switch off flame(be careful, don't burn it)mix it with the milk .Let the mixture cool down for sometime.
  5. Take a small terracotta pot and add the yogurt for setting and the caramel milk to it.Cover the pot and place it in a warm place for 12-14 hours till set.
  6. Serve chilled.
My Tip: Before adding yogurt into the milk for setting,make sure the milk is not too hot or too cold, just lukewarm.
