ABOUT Oriental Spiced Vegetable Rice RECIPE

A simple, flavourful rice dish

Ingredients Serving: 2

  1. Bambino wheat rice 1 cup
  2. Salt to taste
  3. Paste of 1-inch piece ginger and 4 garlic cloves
  4. Oil 2 tablespoons + 1 teaspoon
  5. Sprig Malacca blend 2-3 tablespoons or as needed
  6. Juice of 1 lemon
  7. 1 medium-sized carrot, 5-6 beans, a small piece of cauliflower, 1 medium-sized onion, 1/2 medium-sized capsicum, chopped
  8. A few stalks of coriander, finely chopped

Instructions

  1. Boil 3 cups water with a little salt and 1 teaspoon oil added to it, on high flame.
  2. When water boils, reduce flame to medium. Add the wheat rice. Cook till the rice is done. It shouldn't be overly cooked. Switch off gas.
  3. Transfer cooked rice to a colander. Run cold water over it. Let all the excess water drain out.
  4. Heat 2 tablespoons of oil in a pan. Add in the ginger-garlic paste and chopped vegetables, along with a little salt. Cook on medium flame till veggies are cooked, but still firm.
  5. Add in the cooked rice, salt to taste and Sprig Malacca blend. Mix well. Cook on medium flame for about 2 minutes.
  6. Switch off gas. Add lemon juice and coriander. Mix well. Serve hot.
