ABOUT Pasta con Yoghurt RECIPE

This is pasta with yoghurt used as a sauce. Any additional ingredients like zucchini , diced carrots can be added to it for extra flavor. Also, crushed and roasted garlic can be added to the beaten curds for that pungent taste and crunch. Bumped across this dish while browsing for new pasta sauces.

Ingredients Serving: 2

  1. 2 cups of macaroni
  2. 1/2 a cup of sweet corn kernels
  3. 3/4 cup of thick curds
  4. 1 onion diced optional
  5. 3 teaspoons of extra virgin olive oil
  6. Water to boil pasta
  7. Salt to taste
  8. 1 pinch of crushed pepper
  9. 1 pinch of crushed dried mint

Instructions

  1. Boil water. Add a little salt, few drops of oil.
  2. Add pasta and cook till al dente.
  3. In the mean while, beat thick curds. Add a little olive oil to it.
  4. Heat oil in a pan.
  5. Add diced onions and let it turn translucent.
  6. Add sweet corn kernels to it. Cover with a lid. Let cook for a min.
  7. Drain the pasta and add it to this pan.
  8. Add the beaten curds slowly and gently stir it.Switch off the flame.
  9. Season it with crushed black pepper and crushed dried mint leaves.
