ABOUT Carrot muffins with sunflower seeds RECIPE

A tasty muffin recipe to welcome the Christmas season.

Ingredients Serving: 6

  1. 265 grams all purpose flour
  2. 125 ml low fat milk or soy milk
  3. 150 grams carrot, finely shredded
  4. 1 tbsp olive oil
  5. 2 tbsp sunflower seed kernels
  6. 70 grams brown sugar
  7. 1 tsp lemon rind, finely grated
  8. 1/2 teaspoon mixed spice
  9. 3 eggs
  10. 1 and 1/2 tablespoons sunflower seed kernels, extra
  11. 3 and 1/2 teaspoons gluten-free baking powder

Instructions

  1. Preheat the oven to 180°C. Line twelve 80 ml muffin pans with paper cases.
  2. Take a large bowl and whisk together the milk, eggs, sugar and oil. Then add in the grated carrot, sunflower seeds and lemon rind.
  3. Next, sift in the flour, baking powder and mixed spice, stir these ingredients well together. With a large spoon fold this mixture till it is combined well.
  4. Now add spoons of this batter evenly into the muffin pans. Sprinkle the extra sunflower seeds on top of the muffins.
  5. Bake them for 20 minutes or until a skewer inserted into the centre comes out clean.
  6. Once cooked, remove them from the oven and place on a wire rack to cool.
  7. Serve warm for best taste.

@Lalchhanhimi Please ensure that you fill the batter upto 3/4th to ensure that it rises, you can also increase the baking powder by a quarter teaspoon to make sure it rises well. Hope this helps :D

My cupcakes hardly pop up like that... I become full brim then goes down to half of the paper cup... pls help
