Chicken and Mushroom Soup

Ingredients to make Chicken and Mushroom Soup

  • 4 cups of home made chicken stock
  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 1/3 cup matchstick-cut carrot
  • 1 teaspoon minced garlic
  • 2 cups sliced mushroom sliced
  • 1 cup shredded chicken
  • 1 tsp soya sauce
  • 1/8 tsp white pepper

How to make Chicken and Mushroom Soup

  1. Bring 1 1/3 cups chicken stock to a boil in a medium saucepan, add chicken to it. Cover and keep aside.
  2. Heat oil in a pan, add garlic and onions to it and saute til translucent. Add soya, carrotsand mushrooms. Stir fry for a minute.
  3. Add the remaining stock to it as well as the chicken and adjust seasoning. Serve hot.
