Eggplant Manchurian

Ingredients to make Eggplant Manchurian

  • Brinjal (cut lengthwise) - 4
  • Corn flour - 8 tbsp
  • Maida- 8 tbsp
  • Ginger (chopped) - 2 tbsp
  • Garlic (chopped) - 4 tbsp
  • Green Chilly (chopped) - 2 tbsp
  • Celery (chopped) - 4tbsp
  • Soy sauce - 2 tbsp
  • Tomato sauce - 3 tbsp
  • Sugar - 1 tsp
  • Salt to taste
  • Oil as needed
  • Water as needed
  • Spring Onion - 1 cup

How to make Eggplant Manchurian

  1. Mix corn flour,maida and salt along with some water to make a batter. Marinate brinjal pieces in the batter and keep aside for 30 minutes. Heat oil in a pan. Fry brinjal pieces till done.if you want to retain the crispiness, you can fry one more time.
  2. Heat 1 1/2 tbsp oil in a pan.Saute chopped garlic, ginger,green chilly and celery.
  3. Add soy sauce, tomato sauce,sugar,salt and stir well..check salt before adding it as soy sauce contains salt.
  4. Add 1/2 cup of water and let it boil. Once the gravy is thick, add fried brinjal pieces to it.Stir well till dry.
  5. Finally add spring onion to it and garnish with spring onions. Serve with rice or as appetizer.
