Mutton biryani is a very popular receipe in India. The cooked meat should be soft and must turn tender. It comes straight from the Nawabs and is the soul of every party. Mutton biryani is served with raita and gravy. Make this receipe of delight and impress your family and guests.

Ingredients Serving: 6

  1. XXL India gate rice 500 gms
  2. Mutton 500 gms
  3. FOR POTLI :
  4. ( 2 black cardamoms, 4 green cardamoms, 10 cloves, 15 peppercorns, 1 tbsp Saunf, 1 Dagad fool, 1 inch Cinnamon stick, 1 Javitri, 1 tsp cumin seeds, 1 Bay leaf, 1 tsp Coriander seeds)
  5. 2 sliced onions
  6. 6 green chillies
  7. 1/2 tsp hing
  8. Ginger 1 inch
  9. Garlic cloves 7-8
  10. For masala :
  11. Refined Oil 2 Tbsp
  12. Shahi jeera 1 tsp
  13. 1 bay leaf
  14. 2 sliced onions
  15. 2 Chopped tomatoes
  16. Grated ginger 1 tbsp
  17. Garlic paste 1 tbsp
  18. Green chillies 8
  19. Salt to taste
  20. Coriander leaves 1 tbsp
  21. Cumin powder 1 tsp
  22. black pepper powder 1 tsp
  23. Garam masala powder 1 tsp
  24. Mint leaves 10-15
  25. Coriander leaves
  26. Half of lemon juice
  27. For Tempering :
  28. 1 deep fried onions
  29. Red/orange/yellow food colour 1/2 tsp
  30. Ghee 1 tsp
  31. Keora jal 1 tsp
  32. Coriander leaves

Instructions

  1. Wash and drain the mutton pieces. Put salt and garlic paste 1 tbsp in it and mix well.
  2. Wash 3 times & soak in water for atleast 30 mins.
  3. Deep fried the sliced onion.
  4. Take cotton muslin cloth, put ingredients in it & make a potli.
  5. In a pressure cooker put mutton, 1 litre water and place the potli into it.
  6. Wait for 6-7 whistles or according to the quality of mutton pieces.
  7. Once the pressure release itself, transfer the broth water and mutton pieces in a big bowl.
  8. Now heat the oil in pressure cooker put cumin seeds, shahi jeera, hing, bay leaf, green cardamom, cloves.
  9. Once they splutter add onions, grated ginger, garlic paste and saute for 3-4 mins in full flame.
  10. Now add chopped tomatoes and green chillies slits saute well . Time to put all ingredients like Coriander powder, black pepper powder, cumin powder, Garam masala powder and mix well.
  11. Now add mutton pieces into it and fry well for 5-7 mins. Put mint leaves, coriander leaves and lemon juice.
  12. Add broth water and squeeze potli juice into it.
  13. Once they simmer put half of the soaked rice ( 250 gms) & allow to take 1 whistle, now turn off the flame and wait till they release its pressure.
  14. Boil water in Handi put salt and refined oil in it. Now add half of the remaining soaked rice ( 250 gms).
  15. When the rice is about to cook. Drain water from it and keep aside.
  16. Come to the pressure cooker, open the lid and sprinkle colour & keora jal in it.
  17. Spread deep fried onions.
  18. Now spread boiled drained rice, ghee into it.
  19. Close the lid & rest for atleast 10mins.
  20. Transfer the biryani into another flat bottomed bowl and mix them lightly. Garnish with Coriander leaves.
