Ingredients to make Eggless Almond Butter Cookies

  • 175g unsalted butter
  • 150g powdered sugar
  • 200g plain flour
  • 1/4 teaspoon salt
  • Pinch of ground cinnamon
  • 50g blanched almonds finely chopped
  • 2 tbsp Milk
  • 1 tsp vanilla extract or few drops of Almond extact
  • Baking powder-1/2 tsp

How to make Eggless Almond Butter Cookies

  1. Preheat oven at 170 C. and grease 2 baking sheets.Cream the butter with the sugar until light and fluffy.
  2. Add vanilla extract, flour, almonds, baking powder, cinnamon and salt and mix together well.Refrigerate for about 1 hour to make the dough easier to roll.
  3. Take out from refrigerator and knead for a minute to make a smooth firm dough,then roll out on a lightly floured surface.Cut them into circular pieces using a cookie cutter, alternately pinch off equal sized balls, flatten slightly and place on baking sheets.Place slightly apart on the baking dish.
  4. Brush each biscuit with the milk
  5. Bake at 170 C for 15 minutes or until golden brown.Remove immediately from the baking sheets and cool on a wire rack.

My Tip:

In place of almonds, you can also add raisins or any other dry fruit.

Can use amul butter and not add extra salt??
