ABOUT AUSH GOSHTI ( Afghan Tomato Soup) RECIPE

This delicious and tangy tomato and meat stew is served as an appetizer. It is quite filling and one can have it as a light meal by itself as it has meat and fettuccine. Traditionally beef is used in this preparation but I have replaced it with mutton mince and flavored with Tangier spice mix.

Ingredients Serving: 2

  1. Mutton mince - 50 gms
  2. Onion - 1/4 cup (finely chopped)
  3. Tomato juice - 2 cups
  4. Coriander leaves - handful
  5. Red chilli paste - 1 tsp
  6. Garlic cloves -3 or 4 ( minced)
  7. Olive oil - 2 tbsps
  8. Tangier Spice Mix- 1 tbsp
  9. Black pepper - 1 tsp
  10. Mustard powder- 1 tsp
  11. Salt - to taste
  12. Lemon juice -2 tsps
  13. Chickpeas- 1/4 cup (boiled)
  14. Maida - 1/2 cup (to make fettuccine)
  15. you may use the ready store bought fettuccine too)

Instructions

  1. Collect all the ingredients for the soup .
  2. To make Fettuccine knead the maids with a little salt and olive oil. Roll it out with s rolling pin.
  3. Dust some flour on it and make a roll. Cut out thin strips.
  4. Separate the strips and dust some flour on them to avoid sticking.
  5. Now heat oil in a pan and fry the garlic.
  6. Add the onion and fry till translucent.
  7. Tip in the minced meat
  8. Sauté until the colour of the meat changes.
  9. Add salt, chilli paste and Spice powders.
  10. Saute to mix the spices.
  11. Now add the tomato juice and simmer.
  12. Put the fettuccine into the pan and add one cup water. Add the coriander leaves, lemon juice and chickpeas.
  13. Check the salt and add if needed. Add one cup water and simmer until the fettuccine is done.
