ABOUT Low Fat Cottage Cheese Curry - Shahi Paneer RECIPE

Everyone loves cottage cheese in any form. However people tend to eat less of it because of its' curries heavy nature. But fear no more, you can enjoy this curry everyday. Its low fat, healthy and lite. Best accompanied with biryani and nan breads.

Ingredients Serving: 4

  1. 250 gm cottage cheese (Cut in cubes)
  2. 1 large bottle gourd
  3. 1 large onion
  4. 2 large tomatoes
  5. 1 tbsp tomato puree
  6. 3 green chilies
  7. 1 dried red chili
  8. 6 garlic cloves
  9. 1 inch ginger
  10. 1 tsp mustard seeds + cumin seeds + carom seeds each
  11. 1/2 tsp Asafoetida (hing)
  12. 1 tsp karipatta
  13. 1 tsp red chilli powder + turmeric powder + pepper powder each
  14. 4 cardamoms (Elaichi)
  15. 2 cloves (laung)
  16. 1/2 cup warm milk mixed with 4-5 strands of kesar
  17. 2 tbsp oil
  18. 2 tbsp melted butter
  19. 2 tbsp fresh cream
  20. Salt to taste
  21. For garnishing: Corinader, roasted cashews and green raisins (kishmish)

Instructions

  1. Peel and roughly chop the onion and bottle gourd. Grind these into a smooth paste. Keep aside.
  2. Roughly chop tomatoes, ginger and garlic. Blend this also into a smooth paste.
  3. Heat oil in a pan and stir fry cottage cheese until golden. Keep aside.
  4. Heat butter in a heavy non sticky pan and add mustard seeds and dried red chili. Add cumin, carom, hing, karipatta and coarsly ground pepper and roast until fragrant.
  5. Add in both the pastes and cook for at least 8 to 10 minutes. Add in crushed cardamom and cloves.
  6. Add salt, turmeric powder, red chili powder and 2 chopped green chilies. Simmer for 3 minutes.
  7. Add the fresh cream and warm kesar milk. Cook until one boil and then add cottage cheese cubes.
  8. Garnish with coriander, cashews, raisins and 1 chopped green chili.

Never heard of bottle gourd and cottage cheese cooked together .Nice ,will surely try.
