Ingredients Serving: 4

  1. ½ bottle gourd (lauki)
  2. 3 teaspoons dry mango powder (amchur)
  3. 2 teaspoons sugar
  4. 2 teaspoons roasted sooji
  5. 1 teaspoon daliya ground
  6. 3 teaspoons turmeric
  7. 3 teaspoons red chilly powder
  8. 3 teaspoons sesame seeds (til)
  9. 1 teaspoon mustard seeds
  10. 1 tablespoon curd
  11. 3 green chillies
  12. 12 curry leaves
  13. 3 tablespoons butter
  14. 2 teaspoon oil
  15. 1 banana leaf
  16. Salt to taste

Instructions

  1. In a bowl, grate the bottle gourd into fine small slices. Add dry mango powder, a pinch of sugar, some roasted sooji, grounded daliya, salt, turmeric powder, red chilli powder, sesame seeds and curd. Mix them well.
  2. Make this mixture into small shapes. Place a banana leaf inside the steamer and brush a little oil on top of the leaf. Place the small shapes on the banana leaf and steam them for some time.
  3. To make the accompaniment, take a few slit green chillies in a bowl. Add a little sugar, turmeric powder, red chilli powder, dry mango powder, salt, sesame seeds and butter.
  4. Mix these well and then keep these chillies too in the steamer.
  5. Heat butter in a pan, add mustard seeds, red chilli powder and curry leaves.
  6. When the muthiya and chillies are cooked, transfer them to a serving dish. Sprinkle the tempered curry leaves mix on top and garnish it with curd.
